Embark on an adventurous journey along Australia's east coast, filled with captivating surprises.

During my previous visit to Sydney, my friend Leigh granted us a breathtaking view of the Harbour Bridge's mesmerizing fireworks display on New Year's Eve. Recently, Leigh contacted me, proposing an exciting Thelma & Louise-themed road trip. Although we didn't have a 1966 Thunderbird or Brad Pitt, we did have a 1989 Mercedes Coupe. Intrigued, I agreed, and we began mapping out our thrilling 1,000-kilometer (622-mile) expedition. Starting from Sydney, we planned to traverse New South Wales and finally reach Queensland's enchanting Gold Coast. Inspired by Leigh's suggestion, we opted to explore the hidden gems slightly off the typical tourist trail, veering away from the bustling resorts.

Despite the scorching 40-degree temperatures upon my arrival, I wasted no time seeking refreshment at Bathers Beach Café, situated conveniently near Balmoral Beach, before settling into the charming Cremorne Point Manor hotel. Departing Sydney in the early hours, we swiftly passed through the lush Hunter Valley wine country and continued our journey towards Woolgoolga. Embark on an exhilarating road trip à la Thelma & Louise with Pauline and Leigh as they explore the picturesque route from Sydney to Queensland’s Gold Coast. This adventure takes them to Woopi, or Woolgoolga, as it's officially known, offering breathtaking views of the Solitary Islands and fantastic opportunities for whale watching. In addition, this coastal gem boasts not just one but two stunning beaches.

During their journey, they discovered a hidden culinary gem called White Salt restaurant, where they indulged in the finest and freshest seafood that left them beyond satisfied. What's even better is that this dining experience comes at an extremely affordable price. Right next door to the restaurant, Pauline and Leigh found Beach Motel, their comfortable and clean home for two nights.

A short detour inland allowed them to immerse themselves in the beauty of sugar-cane country before reaching Ulmarra, a well-preserved 19th-century village with a classification by the National Trust of Australia. Here, alongside the meandering Clarence River, they encountered water dragons basking under the sizzling sun, occasionally posing for photos with excited tourists.

If you're a fan of surfing, make sure to stop by Coolangatta Beach. Known for its surf school, this beach offers the perfect opportunity to catch some waves and hone your skills.

After soaking up the sun and sand at Coolangatta Beach, it's time to explore the charming town of Yamba, located just up the highway. With 11 beautiful beaches to choose from, you'll be spoilt for choice. Yamba is renowned for its laid-back atmosphere, lovely restaurants, and cozy cafés. During our road trip, we stayed at the Pacific Hotel, which perfectly exemplifies the unhurried pace of life in this town. On our way back, we decided to take a slight detour and stayed a night at a quaint hotel situated conveniently near Suncorp Stadium. The hotel was comfortable and tailored to cater to the needs of a traveler who is interested in experiencing the local sports culture.

Continuing our journey, we arrived at the unique and eclectic town of Byron Bay. Here, we had the pleasure of meeting Eddie Brook, the co-founder of Cape Byron Distillery. This distillery, established last year in collaboration with renowned Scottish whisky distiller Jim McEwan, produces the exquisite Brookie's Byron Dry Gin.

What makes this gin truly special is that all the organic botanicals used in its creation are sourced from Eddie Brook's family rainforest. Amazingly, this rainforest has been regenerated over a span of 30 years. To witness this incredible process firsthand, we took a tour of Eddie's outdoor "gin factory".
